In the Box Birthday Cake

One water melon cut into 3-5 layers

1 cup of strawberries, black berries, and raspberries

1 tbsp fat free whip cream.

 

Lemon Pie

Pie Crust:

  • 1 Package of HMR multigrain cereal
  • 1 package Vanilla shake (any type: 70+, 800, 120)
  • 1 tbsp. Vanilla sugar free fat free pudding mix
  • 1/2 tsp Lemon extract or sugar free fat free vanilla syrup
  • 1/2 cup of diet LIME soda
  • Honey Graham Benefit Bar

Preheat oven to 350 degrees.  Mix dry ingredients together, stir in soda and extract.  Let stand for 5 minutes.  Spray cookie sheet with PAM.  Spoon batter on cookie sheet, smooth and flatten with back of spoon.  Bake for 10-15 minutes, until golden brown.  Remove cookies and let cool completely.  When cool break up cookies and honey graham bar into food processor, until a crumb mixture forms.

Put crumb mixture into individual cups, save some for extra topping.

Filling:

  • 2 packets of 70+ Vanilla shake
  • 2-3 tbsp Lemon sugar free fat free pudding mix
  • 2 tsp vanilla sugar free fat free syrup
  • 7-9 oz cold water (to desired texture)
  • Squirt of lemon (if needed)

Mix dry ingredients together.  Make a well in the center of the dry mix and slowly add the cold water while stirring, then add syrup.  Mix until smooth and creamy to desired texture.  Add more water if needed.  Spread pudding on top of pie crust.  Add extra crumb mixture on top of filling.  Refrigerate for at least 15 minutes.

Suggestions:  make a double batch and put some in the freezer.  When partially thawed it will taste like custard.
