Simple Summer BBQ                                                      Mandarin Spinach Salad

1 HMR Chicken with BBQ Entree                                                           1 HMR Savory Chicken Entree     

1 cooked corn on the cob cut in two pieces                                           3 cups of baby spinach

1/2 fresh tomato cut in wedges                                                           1/4 cup canned, sliced water chestnuts

1/2 cucumber, sliced                                                                          1/2 cup canned, garbanzo beans

1/4 red onion, sliced                                                                           1/2 cup canned mandarin oranges, drained

1/2 cup shredded cabbage                                                                  2 tbsp. thinly sliced red onions

Fat-Free Italian Dressing                                                                     2 tbsp. low-calorie vinaigrette dressing

Directions:                                                                                         Directions:

1. Cook entree acording to package directions                                      1. Heat Entree for 30 seconds

2. Combine tomato, cucumber and onion slices                                    2. Cut chicken into diagonal pieces

3. Drizzle dressing over cabbage and tomato/cucumber mixture            3. Add canned veggies, oranges and red onions. Toss gently

4. Serve with corn                                                                             4. Add Spinach, toss again
